Restaurant 21212 to open 20th May 2009

The official opening date of Michelin-starred chef Paul Kitching’s new restaurant 21212, in Edinburgh, has been confirmed as Wednesday 20th May 2009.
For Paul it’s the culmination of his dream to set up 21212 and run it in his own imitable style. When it opens in the third week of May facilities will include three luxury bedrooms, a 38 seater restaurant, bar, reception area and private dining. In terms of contrasts it’s night and day in comparison to their eponymous restaurant Juniper. The listed Georgian townhouse over four floors is light, spacious and airy whereas Juniper was an onstreet property which was a former estate agents. The couple and their business partners have invested £4.5m into the project and have been heavily involved in restoring the elegant townhouse to its former glory since inception and although they have retained many period features they primarily wanted to transform the restaurant into a 21st century environmentally friendly restaurant.

The Scottish Fair Trade Forum was established by a group of Scottish Fair Trade campaigners, Scotland-based NGOs and the Scottish Executive in January 2007 to take forward Scotland's work to become one of the world's first Fair Trade Nations.

Our Fair Trade Nation campaign is the logical 'next step' to build on the successful Fairtrade Towns movement in the UK and involves Scots in a cutting-edge national, devolved Scotland-wide campaign that has already garnered international attention. We work closely with the Fairtrade Foundation and other fair trade organisations, companies and groups throughout the UK and elsewhere.

We work to support ongoing Fair Trade activity in Scotland and regularly bring campaigners together to network and share expertise as we seek to build the capacity of local groups to make them more sustainable and independent. We regularly bring Fairtrade/fair trade producers to Scotland to participate in events around the country during Fairtrade Fortnight and, in 2008/2009 have given away £20,000 to support local fair trade projects from Arran to Aberdeen.
